Epoxy is all you need at this stage. If you go outside the re-coat window, then scuff with scotchbrite and shoot another coat of epoxy prior to spraying your 2k build primer.

Okay so I only need one coat of epoxy then use 2k primer and block it to level it out or do i need more than one coat of epoxy?

I generally shoot two coats.
You can do filler work right over the epoxy if more is needed.
Your epoxy will have a re-coat window that allows you to spray over it without sanding. If you go past that re-coat window you need to scuff it before applying more paint.

I would not leave 2k primer exposed for long periods of time since it can absorb moisture and contaminants. It is best to leave in epoxy when you have to let it sit for a week or longer.

80 grit creates some pretty deep scratches, I don't shoot anything unless its over 220 or 320 grit, but that is just me.

80 on a DA would be fine.
You can go finer but epoxy requires some scratch to bond. Your 2k primer is meant for filling and leveling.

68 is right, 80 grit with a D/A on bare metal is perfect.
