Is it OK to spray another coat of clearcoat after the first

Discuss anything after that final masking comes off.

Is it OK to spray another coat of clearcoat after the first coat of clearcoat that had been dried for days?

Sure, just make sure you sand it to give it a "mechanical tooth" so it doesn't delaminate later. I would sand with no less than 400 grit probably wet and go no higher than 500 or so if you want it to stick properly. Just make sure you really get good wet coats over the sanding of the clear.
