First off I'm a hobbyist painter, but have sprayed single stage with my old Devilbiss JGA-502 many times and it always came out great. This is the first time spraying BC/CC so I ordered a FX3000 thinking it was a better gun for BC/CC. I set the gun up as per instructions that said 26psi-29psi at gun. Held gun about 5-6inchs from car, did a test pattern first, held gun level with surface and got the most orange peel I've every seen. Does anybody use this gun and can tell me how to set-it-up?

That gun takes at least 10 cfm to operate. Does your compress put out that much?
Are you using the proper tip size for the product your shooting?

Be sure to set air pressure at the gun with trigger pulled full open.

Back fluid control all the way out. Then while holding the trigger full open turn the knob in until you feel the trigger begin to lift. Let off trigger and turn the fluid knob another 1/2 turn in.

Put some properly mixed paint/primer in the gun.

Tape masking paper on wall, hold gun about 5-6" away and pull trigger for one full second and let go. Check for cigar shaped fan, with consistent coverage of fine droplets and no runs.

Heavy drops means too much fluid - turn flow control in 1/2 turn at a time
Increase air pressure as necessary to get good atomizing of paint. There are other articles on the INFO CENTER page.

The gun came with a 1.4 tip
Air compressor is big enough.
Paint is mixed right.
I'll try the other things you said.

What you think may be Big enough and what is actually required to run that gun properly may be two different things! that gun as advertised requires 9.5 CFM at 29 PSI at the gun.
Now that is NOT the only pressure you will use it at, Sometimes you need less pressure and sometimes you need more pressure just depends on what your spraying, adjustments must be made at the gun. the gun will still consume about 9.5-10 CFM even at lower pressures settings its a function of the Aircap.
Air pressure fluctuations lead to a list of problems that overlap with other problems that's why we harp about having a big enough compressor.
Your gun is a HVLP which means Hi Volume (AIR) and Low pressure (AIR). Flow and Pressure are two different things.
There are also Hi Flow disconnect fittings available you can use, Some that you can buy at Harbor frieght or Lows or Home Depot internal opening are to small for Paint guns and special hi flow fittings must be used. I use them on my Guns and my hose after my regulator they made a world of difference in how well my paint guns work.

Always adjust your regulators pressure to the pressure read at base of your gun, Do not use an adjustable air restriction valve at base of gun to regulate your guns pressure!
You want a T fitting and a Pressure gauge only at base of gun. Again no fancy cheap restrictor valve and gauge combos at the base of gun Just a gauge.

Most 60 gal 5hp 11 cfm machines can handle this gun to a point, but it is pushing the machine to its limits. so if the Pump kicks on take a Break let it catch up.
There are different Fluid tips for that gun listed on there web page are you using the correct Fluid tip and needle size for the material your spraying?
The 1.4 Fluid tip you said your gun had is generally used for Base coats and clears and some Epoxys, I like a 1.3 to a 1.4 for most Basses, clears and some Epoxys depending on what I am spraying. BUT I also use a 1.0, 1.2, 1.5, 1.8, 2.0 and a 2.2 Just depends on what the Paints Technical data sheet says to use.
Orange peel is generally described when spraying Single stage paints or Clear coats
at two low of a Pressure. Wich are you trying to spray??? Base coat or the Clear coat??? If your spraying Primer what kind?
What Fluid tip size and air pressure is recommended on your Paints tech sheet?????
