Masking/Sanding help

I often see folks sanding a masked off vehicle. What if you damage the tape edge while sanding, and two, doesn't the dust stick to the tape edges? Should I prep sand without masking, rather than to have to mask twice or re-mask areas. I have zero experience car painting and have my daughters Nissan as my first project. Any guidance would be much obliged, thanks.

The only time I mask of to sand is to protect the trim , other wise not at all .
fail to prepare ,prepare to fail.
